Achiote Turkey Stew with Savoury Buttermilk Waffles

I bought a couple of turkey thighs and with sort of a black bean and cumin Mexican stew in mind.

Going through some old supplies I found I still had some achiote that I bought the last time I was in Mexico:

The instructions say this is enough for 2kg of meat, so I used half of it.

I cut the turkey thighs up and squeezed out the juice of a whole red grapefruit, and added some olive oil, and some salt and pepper.

I broiled an onion and some celery root along with the two turkey thigh bones.

I took the turkey out of the marinade and sautéed in oil and garlic and then added back the marinating liquid, a can of black beans, and the onion + celery root mixture.

I made savoury buttermilk waffles by using the buttermilk waffle recipe, but one less tablespoon of sugar, extra teaspoon of salt, and some thyme and marjoram.

I also made some plantain chips as well.

I really like how this turned out. There could be at least twice as many black beans. There was a bit of brightness and sweetness missing.
