Fermented pickled tomatoes

Fermented tomatoes with fresh tomatoes are not common, and even less common with sliced. Green tomatoes and cherry tomatoes are more common.

But I had a lot of tomatoes and new fermentation jars to try.

I also had this great memory of Yummy Mammy (now closed), which had this very traditional fish soup that had lactic fermented tomatoes in it.

Here’s a recipe with some background:

Cracked these open yesterday and finished them today.

Very garlicky and salty, but with a nice little sparkle and tang from fermenting.

Scooped it into another container without all the brine to put in the fridge.

Had it with fried eggs on toast for breakfast.

Finished it off for dinner mixed with a chopped cucumber.
