Processing some rhubarb today and looked up this recipe on fermented rhubarb for inspiration.
Put peel from an orange and a handful of green cardamom pods in. Used 2 cups water, 1 tsp salt, and 2 Tbsp of cane sugar.
R is not a fan of star anise, and I don’t really like cloves, both of which could have been nice in here. Or a cinnamon stick.
