Peppery Tomato Vegetable Soup

Do I need to log every little lunch time creation? Maybe!

I made a roast chicken last night and put the bones and carcass in the Crockpot to make stock overnight. I cleaned out my frozen veggie bits — onion tops, cilantro bottoms, etc. And added a couple of carrots and a knob of ginger.

Today I strained it into a pot and added two carrots, a small onion, and 3 or 4 brown mushrooms, all diced.

Brought it up to a boil and then simmered on high for about 45 minutes until it reduced.

Added a Tablespoon of tomato paste (we use tubes of paste so it’s easy to add to dishes), a splash of apple cider vinegar. Lots of fresh ground black pepper and salt to taste.

Added ~1/2 cup of orzo and boiled for about 7 minutes.
