I make these a lot in the summer with fresh beets. Peel the beets and cut them in thin slices.
Add to a pot with some sliced onions and a clove of sliced garlic.
Add 4 Tbsp of Apple cider vinegar or to taste if you like it less vinegar-y. Add water to cover the beets.
I added dill seeds and brown mustard seeds, plus salt and a Tbsp of sugar.
Bring to a boil then reduce to simmer until the beets are soft — about 20-30 minutes.
