Final plate. Leg of lamb with herb paste of oranges and dates. With carrots and leeks and pan sauce.
Sweet potatoes made with juice of two oranges, olive oil, and tsp of sambal oelek (could have done more sambal but kept it just a little background spice).
Brussel sprouts were sautéed with guanciale and onions.
Plus added some lemony pickled cabbage and a little of the liquid brine for salt, acid, and citrus flavours.
Not pictured on the plate, I made a brussel sprouts slaw with sliced apple, some minced apricots, a handful of minced radishes, juice from 2 fresh lemons, a little date vinegar, and some maple syrup.
Also savoury buttermilk waffles! Very tasty with gravy / pan sauce.
For dessert, we had chocolate haupia pie from Half Baked Cookie Company.
